Pineapple combines sweetness with a little sour zestiness, making it perfect for pizza. Put it on a pizza without any meat, and the bubbly cheesiness wraps around the little chunks of sweet pineapple like
Pineapple slices on a tangy hot slice of pizza might be a weird combination to those who haven't tried it yet, but if you have, you know that it is a juicy, flavor bursting combo. The two together might not be liked by everyone, which mainly has to do with specific taste buds on your tongue. It also has to do with the fattiness of the cheese. since the cheese is so fatty and leaves a heavy grease layer on your tongue, the tangy pineapple that only contains 0.012 % fat, cuts through the greasiness and creates a balanced feel.
The chemistry behind it: Pineapples contain an enzyme bromelain that breaks down protein and creates a burning and tingly sensation. On the contrary, tomato sauce contains lycopene, which is a protein/ carotenoid commonly found in red fruits and vegetables. Since lycopene is a protein, the enzyme in the pineapple starts to break down the lycopene, creating a tingling sensation on your tongue. This creates that enjoyable feeling when you chomp down on a slice of piping hot pizza.
